How to Reverse-Sear a Prime Rib (Standing Rib Roast). This recipe is really easy. The process is to cook it low and slow for approximately 2 hours using a blend of cherry and oak wood. Then, turn the heat up to high and quickly sear each side of the Prime Rib.
Simply season a few hours before. I used Oakridge BBQ Black OPs Brisket Rub (http://armadillopepper.com/Oakridge-BBQ-Signature-Edition-Black-OPS-Brisket-Rub-BBQRUB-ORBO.htm). You could also use salt and pepper or your favorite beef rub. Make sure you do not use a high sugar content rub, unless you like “sweet beef”.
Let the beef rest in the refrigerator with seasoning. When ready to cook, heat the grill to 225 degrees using the 2-zone cooking method.
Place the Prime Rib on the grill on the cool side of the grill. When the internal temperature reaches 125 degrees F (I’m targeting medium rare), turn the grill up to high and sear each side of the Prime Rib. Remove from the grill and let rest for 15 minutes.
