Today, I’ll show you how to smoke alligator wings. We’re using the Masterbuilt Electric Smoker, but this same recipe will work in any smoker.

To start, brine the alligator in a 3/4 gallon of water, 1 quart buttermilk, 1 cup kosher salt, 1/2 cup brown sugar and 2 tablespoons Gator Hammock Gator Sprinkle. Mix all the brine ingredients together, place the gator wings in the brine and then put in the refrigerator overnight.

The next day, remove the gator from the brine, pat dry and season liberally with the Gator Hammock Gator Sprinkle, available here http://armadillopepper.com/Gator-Hammock-Gator-Sprinkle-BBQRUB-GHKSPK.htm.

Smoke at 225 degrees for 3 to 3.5 hours. Temp of gator should be 165 F minimum. During the last 30-40 minutes, glaze with your favorite BBQ Sauce. I used Gator Hammock Hog Wallow, available here http://armadillopepper.com/Gator-Hammock-Hog-Wallow-BBQ-Sauce-BBQSAU-GHHW.htm.
