Armadillo Pepper shows you how to smoke Bacon-Wrapped Cornish Hens. Cornish hens are the perfect size for an individual and very easy to smoke. Total time in the smoker is only 1.5 to 2.0 hours.

You can smoke Cornish hens in 4 simple steps:
1) Brine the Cornish hens
2) Season – today we are using Stubb’s Chicken Spice Rub
3) Wrap in bacon
4) Place in the smoker at 230 degrees F until they reach an internal temperature of 165 degrees. Today we are using cherry wood.

Our equipment is the Masterbuilt 3000 Electric Smoker. Easy to get to temperature and very simple to use.
