Many people will tell you that to smoke food you have to have a smoker type grill to achieve the desired results of slow cooking and great flavor. Nothing could be further from the truth. Let me show you how easy it is to smoke any kind of food on a charcoal grill using Milt’s Gourmet BBQ Pellets.

I am smoking some lamb today, let me show you how.

First, you must be prepared, and by that, what’s a Barbecue without a glass of refreshment for the one doing the work. So first, I suggest you pour yourself some liquid refreshment of your choice to build your confidence and build your endurance to get you through this.

Now, here you go:

1. I prefer to start my coals in a chimney. This does away with any left over chemicals or flavor from using charcoal starter fluid. If you use a chemical starter fluid of some kind, be sure and let it burn off so the nasty taste won’t be absorbed by your food.

2. The coals are ready to go on the grill when they are gray white in color. Also, make sure and use PLENTY of charcoal briquettes, as we are going to be cooking very slowly, and you want to be sure and have enough charcoal to finish the job.

3. Once the charcoal is ready (gray/white in color), load all of it into just ONE side of the grill. We are going to put our food (in this case lamb chops) on the other side of the grill. This gets the food cooking real slow, and gives it the maximum time to absorb the wonderful flavors from the BBQ Pellets “smoke”.

4. Take about a quarter bag of our BBQ Pellets (1/4 to 1/2 cup) and sprinkle them directly on the coals. They may flame up, but don’t worry about it. When you close the lid, it should go out. If not, just spray a little water on it. Great tip: Keep a spray bottle of water by your grill.

5. Insert a meat thermometer into the thickest cut of meat, fish or poultry you are cooking. You want to know when the thickest cut is done cooking. That way, all you have to do is wait for the beep to know your food is finished and you won’t have to open the lid of your grill and lose all the heat and smoke.

6. Close down your grill vents top and sides. We want to “starve” the coals so everything cooks at low heat and has time to absorb the wonderful flavors of our BBQ Pellets.

Go back to your favorite beverage and wait for the beep of the thermometer. That’s all there is to it. When the thermometer beeps, the food is finished “smoking” and you are ready to enjoy the tastiest and most flavorful lamb chops, steaks, fish and chicken you will ever eat.
