MEAT
Cover chuck roast in olive oil and REC TEC Steakhouse Seasoning.
Smoke for 2 hours at 200 degrees. This recipe is enough for two roasts but can easily be cut in half.

GRAVY
32oz beef stock
12oz beer
2 cans cream of mushroom
1 can cream of chicken
2T beef base
1 packet beef stew
1 packet au jus
2 packets brown gravy
-whisk all ingredients together. Put a little heat on it to dissolve ingredients.

Add roast and the following to the gravy mix
6 quartered onions
1 lb carrots
1.5 pounds potatoes
Ladle some gravy on top and cover with foil
Finish on the grill using the time vs temp suggestions below.

You can do this at the following temps for the corresponding times:
Smoke for 2-3 hours @ 200 and finish @ 350 for 4-5 hours
Smoke for 2-3 hours @ 200 and finish @ 300 for 3-4 hours
Smoke for 2-3 hours @ 200 and finish @ 225 for 9-10 hours
