Today I’m making Sex on the Beach Scallops wrapped in bacon on the Gourmet Guru Grill. These are the best scallops you will ever eat! This recipe is quick and easy.
We will start by making the Sex on the Beach sauce, then prepare the scallops followed by a quick cook on the Gourmet Guru Grill
Using lump charcoal, heat your Gourmet Guru Grill to approximately 450 degrees. We will cook the scallops on direct heat. I like to use a Grillaholics grill matt for easy management of the scallops on the grill, but that is optional. You can grill direct on the grates, but make sure to oil the grates first to prevent your scallops from sticking.
Sauce Ingredients
• Butter, 1 TBSP
• Vodka, 2 Shots
• Peach Schnapps, 1 Shot
• Cranberry Juice, 2 Shots
• Orange Juice, 2 Shots
Scallops
• 8 to 12 Large Sea Scallops
• 4 to 6 Slices Bacon cut in half. You will need 1 slice of bacon for 2 scallops
• 2 TBSPs Roughly cracked fresh black pepper. I like to use larger size granules and not finely ground pepper.
Recipe Instructions
Place all the sauce ingredients in a small pan. Heat on medium and simmer until the sauce thickens. You want to reduce the sauce to a “syrup-like” consistency. This should take 10 to 15 minutes.
While your sauce is reducing, wrap each scallop with 1/2 slice of bacon. Secure the bacon to each scallop with a toothpick. Place the pepper in a small plate or bowl. Now, dip the top and bottom of each scallop in the cracked pepper.
Grill the scallops for approximately 6 minutes. Grill the top and bottom for 1 minute each and then grill the sides rotating every minute to get the bacon cooked.
Remove the scallops from the grill and pour your Sex on the Beach sauce over the bacon-wrapped scallops. Grab your favorite beverage and enjoy the best scallops on the planet!
