Reverse Sear Ribeye
1. Set REC TEC (or other smoker) to 180.
2. Put GrillGrate on REC TEC.
3. Season Ribeye (I used salt/pepper mix)
4. Smoke Ribeye until internal of 100 degrees (this took me about 40 minutes).
5. Take off grill and crank up heat to FULL (or 500) and bring Ribeye inside.
6. After REC TEC reaches 500+, coat GrillGrate with olive oil and place Ribeye onto it.
7. Put a couple pats of butter with some rosemary on it and then close the lid.
8. Set timer for 2.5 minutes.
9. When timer is up, flip Ribeye and put a couple more pats of butter on it.
10. Set timer for 3 minutes.
11. After 3 minutes, it should be close to a medium temperature (adjust time for different tastes).
12. Bring in and let rest 10 minutes.
