I got caught up in the Christmas party and did not film the meat coming out of the grill. The one on top of the fire box (left side) turned out perfect. The one on the right side needed more cooking. In the future I will temp the one over the fire box. I believe 132 degrees would be the right temp to pull the meat out, rap in foil, and let rest for 20-30 minutes, then serve.
