Smoked food is almost the crown and glory of the grilling world. Smoked meat takes charcoal grilling to a whole new level so being able make your own smoker is really something worth trying.
Making a homemade smoker really isn’t as hard as it sounds though. It goes without saying that an actual smoker will do a better job, but for anyone trying to get some first-hand experience of smoking, this is a great place to start. All you need to start smoking is your charcoal grill, and a few woodchips. Preferably water soaked Applewood because it gives added taste as well as doing a great job of smoking both meat and vegetables.

Simply put some unlit charcoal in one corner of the grill, covering around a quarter of the grill. Next using prelit chars, cover the already covered area and sprinkle a handful of woodchips that have been soaking in water for around 30 minutes on top. Then put the grill grates back on, and using a small metal tray with a little water in it on top of the grates, over the same section that the charcoal and woodchips are underneath. Then open the top grill vent, leaving the bottom one closed and wait for the smoke to start to rise.

That’s it, there’s nothing else to it! The meat can be put on once you feel there’s enough smoke being produced. About 2 and a half hour provides a thorough smoking for the majority of meats and vegetables only need around an hour.
