This is the first time I’ve cooked Flounder using Cedar planks. Yet they turned out perfectly. This is how easy the process is using a Traeger and Wildwood Grill planks.
1. Marinate the fish anyway you’d like. I marinated the fish for about 3 hours.
2. Soak the cedar planks for 2-3 hours. I used stout beer.
3. Turn on the Traeger to smoke setting for 5-7 minutes. Keep lid open.
4. Close lid and turn up heat to 350.
5. Put the wet planks on the grill. Then add the fish to the planks.
6. Insert a temperature probe into the middle of the fish. Set temp to 145. Close lid
7. Once it reaches 145, open the lid and pull the planks off the grill. You are done. Sometimes you can keep the planks wet by spraying with a water bottle. I didn’t see the need to do that. The less you check, the Traeger does all the work.
