This roast shoulder of lamb on top of boulangere potatoes is a fantastic and easy Sunday lunch. It makes it’s own gravy, you’ve got super soft meltingly tender meat, and those crisp potatoes that soak up all of the lamb flavour. All you need is veg and you’ve got dinner!

Ingredients (serves 4-6):

2kg shoulder of lamb
5-7 large desiree potatoes finely sliced
3 medium onions finely sliced
5-6 cloves of garlic
1 litre of good chicken or veg stock
2-3 sprigs of fresh rosemary
4-6 sprigs of fresh thyme
Olive oil
Salt and pepper
