Check out this smoked prime rib roast recipe that was done on the Traeger electric smoker. If you are looking to wow friends and family for Christmas or Holiday or special occasion this smoked prime rib roast recipe will do the trick!
Smoked prime rib roast recipe:
Step 1
– Rinse and trim the prime rib roast then dry it
– Coat it with olive oil
– Add rub (The Spice Hunters, Grill Shakers, Hickory used here)
– Cut cloves of garlic into wedges
– Cut 1/4” to 1/2” slits through the fat cap and into the meat and place the garlic in the meat
– Sprinkle fresh or dried rosemary on top
– Place the prime rib roast in pan with a rack
– Rest the prime rib roast overnight in the fridge or let it sit out ~2 hours until it gets to room temperature before putting it on the smoker
Step 2
– While the prime rib roast is getting to room temperature set the smoker on high or anything ~400+ degrees
– Add beef stock to the pan for moisture and to be added to the Aju later with the prime rib roast drippings
– Place it on the grill for 30 minutes at ~400+
– Reduce the temperature to 250 and we targeted medium rare 130-135 internal temp
– This prime rib roast was 24 lbs and took about 15-20 minutes per/lb though I had to slow it down because folks had to come later than expected. So I turned it down to 180 for a while and then up to 325 to finish it off right on time;-)
* Make sure to use a digital thermometer and make sure it’s accurate (taking the temp of boiling water will confirm accuracy)
Step 3 (optional)
Horseradish Cream Sauce Recipe for Prime Rib: https://youtu.be/XxrU4wKjoYg
– 2 to 3 Tbsp fresh horseradish or horseradish sauce
– 1 Tsp fresh or dried rosemary
– 1Tsp basil
– 1 Tsp oregano
– 1/2 cup sour cream
– 1 cup heavy cream
– 1 squeezed lime juice
– Smoked salt (or salt) and pepper to taste
– Lime zest (optional but tastes great)
* Lemon can be used instead of lime but lime is our preference
Step 4
– Once the prime rib roast reaches target temperature remove from the smoker and let it rest 20-30 minutes with a foil tent
– Strain beef stock and prime rib roast drippings, add to the Aju (optional)
