Traeger grills cook hot and fast or low and slow and they sear like a Pro. Seal in the natural flavor of that prime cut of protein by giving it a good sear directly on your wood-fired grill. To get the perfect sear, preheating your grill is crucial, after the grill is maintaining at least 350°F or higher, sear on the hottest spot for an uninterrupted 3-5 minutes. Every grill is different, so find your hot spot and use it. Most Traegers have a hot spot on the right end of the grate near the back corner. When grill marks occur, the meat is seared.

When you spend good money on prime cuts of meat, cooking them to perfection is key to creating a melt-in-your-mouth dish. Try searing a New York strip steak, rib eye, or filet mignon. Searing makes meat so delicious that you won’t even need to add BBQ sauce.

A sear is to mark, brand, or char the surface with extreme heat. Searing seals in natural flavors and creates a new flavor combination where it is seared. When protein and sugars are heated above 350 degrees F, meat browns, and then caramelizes, this improves flavor and flavor is what inspires people to lick their plate.

If you’re having trouble searing, try these tips for searing on a Traeger. Preheat your Traeger by setting it to Smoke, keep the lid open until a fire is established and the smoke begins to billow, this takes about 10 minutes. Close the lid and set it to High to continue preheating for about 10-15 minutes. When your grill temperature is maintaining at least 350 degrees F or more, place the meat on the hottest spot, close the lid and cook for 3-5 minutes uninterrupted—untouched and lid closed. Turn the meat over and cook for another 3-5 minutes. For a tender, medium rare steak, cook it until the internal temperature reaches 125 to 135 degrees F, then let the meat rest for 10-15 minutes before devouring.
