Having zero experience with beef shank I was intimidated to try this one guys. But I am so glad I did! As you know BEEF SHANK is a very inexpensive cut of meat and not very popular, I think the reason is because most folks are afraid or have no idea how to cook beef shank. I was one of those folks. 🙂 But I am pleased to say they turned out way better than I could have ever thought. Perfection was achieved on this cook, this cook was award one of the highest scores we have giving tying up with very expensive cuts of meet. I cooked it for 20hrs @ (155°F / 68.3°C)
