Today we’re doing Grilled Steak Flatbreads on the Weber Kettle Grill with the Slow ‘N Sear. We’re also making a side dish of cauliflower tabouli. While we were aiming originally to make pita bread, our resources fell short so we ended up with a really good flatbread. All in all it was a delicious cook. Recipes are below!

TODAY’S RECIPES:

STEAK MARINADE:
2 cloves minced garlic
1/4 cup balsamic vinegar
1/4 cup olive oil
1 tbsp black pepper
1/2 tsp cumin
1 tbsp Italian seasoning
1 tbsp minced fresh oregano
1 tsp salt
Splash of worcestershire sauce
2 tsp crushed red pepper

Mix together in a non-reactive dish. Meat can be marinated overnight to an hour before cooking.

GARLIC YOGURT TAZIKE SAUCE:
1/2 cup Greek Yogurt (whole fat)
4 cloves minced garlic
1/4 cup olive oil
2 tbsp lemon juice or the juice of one lemon
Salt and pepper to taste

Mix all ingredients together and serve.

CAULIFLOWER TABOULI (serves 4-6):
4 cups cauliflower florets or 1 whole head
1-2 cups small tomatoes halved or diced fresh tomatoes
1/2 – 1 bunch diced parsley
1/4-1/2 cup diced basil, dill, cilantro, etc
1 cubed cucumber

TABOULI DRESSING:
3 cloves minced garlic
Juice of two lemons
1/2 cup olive oil
Salt and pepper to taste

Roast cauliflower until soft. Mash or pulse in food processor. Mix with tomatoes, herbs, cucumbers. Whisk together with dressing.
