Today on Armadillo Pepper TV, we’re making Citrus Chicken with a Honey-Orange and Bourbon glaze. Satsuma orange trees are popular in North Florida. When ripe, Satsuma’s take on a candy-like sweetness. So, I’m using Satsuma oranges in this citrus chicken.

Marinate chicken breasts in 1 bottle of Stubb’s Chicken Marinade, the juice of 1 of these Mandarin Oranges, 2 teaspoons salt and 1/2 teaspoon ginger in the refrigerator overnight.

The chicken breasts can be made on the grill in which case you will want to cook at around 350 degrees, or you can make in the oven. I’m making this in the Big Easy Oil-Less Fryer.

Next, make the honey-orange and bourbon glaze with Kentucky Bourbon, orange blossom honey and dried ginger.

Simmer until the glaze thickens.

The chicken is done when it reaches an internal temperature of 165 degrees. Add the glaze during the last 10 minutes of cooking.
