Today I will show you How to Smoke a 7 pound Brisket Flat using Fogo lump charcoal on the Gourmet Guru Grill. You can certainly use this recipe and technique with any smoker, but this Gourmet Guru Grill really does a great job.The Gourmet Guru is a Kamado Style grill and holds the cook temperature steady with minimal effort.
To start this recipe, we will dry brine the brisket overnight, then season with Oakridge BBQ Black OPs Brisket Rub and add a little smoke flavor using a combination of oak and mesquite wood.
Ingredients
• 7 lb brisket flat
• 3.5 teaspoons Salt

Recipe Instructions
1. Trim excess fat off the brisket.
2. Sprinkle the salt on both sides of the brisket, then place in the refrigerator for at least 12 hours. This is referred to as dry brining and will add flavor as well as help the brisket remain moist.
3. The next day, season the brisket with the Black OPs Brisket Rub.
4. Heat the Gourmet Guru Grill to 225 degrees F. Add the plate setter because the brisket will be cooked over indirect heat.
5. Place the brisket on the Gourmet Guru Grill. For the initial three hours, mist with apple juice, beef broth or beer every 90 minutes.
6. When the brisket reaches 155 degrees F, approximately 4.5 hours for this cook, remove the brisket from the grill, wrap in foil along with a few ounces of apple juice or beer.
7. Place back on the grill and cook until the temperature reaches 200 to 203 degrees. For this cook, it required another 2.5 hours. Total cook time = 7 hours.
8. You can wrap the brisket in a towel and place in a cooler to keep it warm for 2-3 more hours (if you are not yet ready to serve it).
9. Make sure to carve the brisket against the grain.
