Beer can chicken is one of the easiest and tastiest BBQ dishes to cook. In this video we have used the Traeger ceramic chicken crown, but other BBQ manufacturers do have their own versions; the idea being that it holds a can of beer over which you place your chicken upright so that it cooks evenly all round.
We have used a medium chicken covered in a little rapeseed oil then applied the Traeger Sweet Rub. Into the chicken throne is poured some beer with garlic and rosemary added; these flavours don’t overwhelm the chicken but just make it super tasty.
Pre-heat the grill to 200C, take out the middle grate and place the chicken over the area of indirect heat. Insert the probe into the thickest part making sure it is not against the bone or into the cavity. The Timberline 850 will send you a notification once the chicken reaches the desired temperature of 75C. As the Traeger is outside it draws in the damp air and helps keep the chicken nice and moist. We found that putting on the rub, which had a high percentage of sugar, caused the outside to char before it was ready, so you may need to place some tinfoil over the bird about three-quarters of the way through the cook. Once you have taken off the bird cover it with tinfoil and some folded tea-towels and leave to rest for 30 minutes before carving. This allows the muscles to relax and the juices to stop flowing, making it more tender and juicy.
