We decided to test out the new grill (Rec Tec 680) and thought a brisket was the perfect way to do it. The 12 hour cook on this brisket gave us a great flavor profile and bark, but with any new adventure, there is a learning curve, and we’re hoping to make improvements on the next brisket.
